1/3 of a rotisseire chicken - what to do?

I've got about 1/3 of a rotisserie chicken left over from last night...any ideas as to what I should do with it, preferably for supper tonight?

DH likes 'proper' meals so soup out of the question, I'm afraid!

Ooooh, this is my new favourite! We have roast chicken every Sunday and here's what we do with the leftovers every Monday:

Mix the cold, chopped, cooked chicken with chopped yellow pepper, spring onion, cucumber and tomato (seeds taken out) and mayonnaise. Some flat-leaf parsley really adds something here too but it's fine without. Bung on a jacket potato and it's yummy!
