Give me your best chick pea/ baked bean/ lentil recipes!

In the spirit of living very cheaply I have bought lots of beans lentils and chick peas, now I just need some recipes! Any ideas welcome

chick peas, white fish, potatos, tinned tomatos, onions. fry onions gently, parboil potatoes. If feeling flush, large slug of white wine or sherry. Otherwise chuck tomatos and potatos in, add smoked paprika, simmer, fish last for quick gentle poaching. Tis spanish-ish.

Lentil dhal with rice: fry finely chopped onions, garlic, cook lentils in water for however long it says on packet. Add onions an garlic. If feeling flush, add creamed coconut and shredded fresh ginger. Add small amount of any curry paste/powder.

Fry some butter quickly, chuck in some cumin and mustard seeds and a few thin strips of garlic - till browned and popping. Chuck whole lot over cooked dhal with some fresh coriander leaves. Serve with rice.

Yummy.

Hi not my recip-e pinched it of here its now a regular in our house.

Chickpea Curry: (like Madjur Jaffrey's)

can of chickpeas
1/2 can tomatoes
2-inch piece of ginger, peeled and chopped
4 cloves garlic, chopped
1 dried red chili
1 tablespoon ground coriander
2 teaspoons ground cumin
1/2 teaspoon ground turmeric
1/2 teaspoon cayenne pepper
1 medium stick of cinnamon
5 whole cardamom pods
2 bay leaves
1 onion
2 medium potatoes peeled and chopped

Put the tomatoes, ginger, garlic, chilis, coriander, cumin, turmeric, cayenne pepper, and splosh of water in a blender and blend until smooth.

Pour the oil into a pan and set over medium-high heat. When the oil is hot, put in the cinnamon, cardamom and bay leaves. Ten seconds later, add the onion ad potatoes.

Stir and fry for 6 minutes, or until the onion is lightly browned. Add the paste from the blender. Stir for a minute. Cover, reduce the heat to medium-low, and cook for 6 to 7 minutes, lifting the lid now and then to stir.

Add the chickpeas and 1 cup of water. Stir and bring to a simmer. Cover, and cook gently on a low heat for 20 minutes, stirring occasionally. Remove bay leaves before serving

Chick pea and potato curry: start off with an onion, some garlic, chilli pepper and ground spices (mustard seed, turmeric, cardamom), add a tin of tomatoes, then diced raw potato and chickpeas, cook till potatoes are done. Lovely with rice and a bit of mango chutney.

And lentils are good cooked as dhal...

I made red lentil dhal the other day (see WilfSelf's post!) and added some creamed coconut and it was delicious.

I also make lentil tomato sauce - i.e. the basic tomato sauce you would make for pasta, add some cooked red or green lentils, and use to make moussaka, lasagne or shepherd's pie.

i make a chickpea, potato and aubergine curry. similar recipe to yorkie's except i fry cubed aub first, put it to one side and then add once the potatoes are softening.

Mmm sounds good, sounds greek . While we're on the subject, any recipes for a nearly 9 month old involving lentils or chick peas are also welcome...

Jamie Oliver's North African lamb works surprisingly well without the lamb. North African chickpeas, basically. Very tasty.

Morrocanish chickpea stew thing. I also add chicken thighs, but you don't need to.

Fry off some chopped white onion, for a couple of mins, add 1 tsp cinnamon, and 1 tsp cumin, and 1 of ground ginger, fry onion until soft. Add a tablespoon of honey, then add chicken stock and chickpeas, simmer for 10 mins or so, add julienned courgettes, juice of a lemon, seasoning, and choppped fresh parsley. Serve with cous cous or rice, or eat as a brothy soup/stew with nice bread.

Sausage and chickpea casserole. Make a spicy tomato sauce (fry onions and garlic, add crushed chilli, add tin chopped tomates and simmer for ten mins), add cooked sausages and simmer for another few minutes. Good with vegetarian sausages too. Great with mashed potatoes!

My favourite chickpea recipe:

Fry an onion and some garlic until it is softening, add a carrot chopped into small dice and a stick of celery cut into thin slices. Fry a bit more until the onion starts to brown. Add two teaspoons of mild smoked paprika (you can get it in Sainsburys in that bit with all the posh/interesting foods) and a couple of finely chopped skinned tomatoes and a glass of white wine. Bring to the boil. Add a can of chickpeas, top up with stock or water and simmer the whole lot until the sauce is quite thick (about half an hour). Add a squirt of lemon juice and some fresh spinach. Stir the spinach in until it's wilted and serve with rice or nice bread. You can add a bit of chopped bacon at the carrot stage if you want, too. It's gorgeous and you can do it with green lentils, too.

and if you're really feeling broke, replace the sausages in recipes like Lucifera's with sliced Chorizo which you fry at same time as onion. You only need a small amount to add lots of delicious flavour.

chickpea and mango/peach curry

tip tin of coconut cream into pan, heat to a simmer, add 250g of chopped dried apricots, 2-3cans drained chickpeas, drained can mango slices or peach slices (I usually cut up finer), 2-3 tsp favourite curry powder, pinch of ginger and slosh of lime or lemon juice. cook until chickpeas are softened. Add up to 1c water to thin if needed. Serve on rice with baked tortillas on the side

lentil and vege soup

Saute 1 onion and some garlic (to taste) with tsp each cumin, tumeric and coriander, add chilli (to taste) season. Add 4litres vege stock, 1c lentils and loads of finely diced vege (potato, kumara, carrot, pumpkin, parsnip, broccoli etc) cook on high in slow cooker 4 hrs check and if needed thin with coconut cream. Can mash or puree as desired or leave chunky.
