I tried to do a good thing for DP and roast some chicken pieces for his lunch (DP is recently diagnosed coeliac and he really misses his sandwiches). Anyway, seems I misread the recipe and they were still pink when he bit into them (only cooked them for 25 mins rather than the 40 it was supposed to be). They were cooled and kept in the fridge overnight, can I put them back into the oven for the rest of the cooking time or do they just need to go in the bin?
I'm normally quite good in the kitchen. Feel a bit of a failure now! Can't even roast chicken (which reminds me of a joke I got in a cracker once - what's the difference between Pea soup and roast chicken? Answer - anyone can roast chicken)
