Am doing veggie version of this, what do you put in for filling, I'm thinking courgette, onion, peppers, mushroom......but it doesn't seem to exciting. Is that pretty much it? Aubergine seems weird. Thanks for any suggestions.
you can add finely chopped or grated carrot, courgette, peppers, onions (I like adding lots), garlic, lots of tomatoes or tinned tomatoes, and Iusually add either red lentils, green lentils or millet too to add some protein.
I use whatever veggies I have left at the end of the week to make a veggie lasagne. This weeks has brocolli, peppers, carrot, corn, mushrooms and onion. Aubergine is good in veggie lasagne as it absorbs all the flavours.
Thanks for that, if you are adding lentils, do they need to be cooked before hand or do you just add them to the ragu? Would you add spinach in layers? Would that be nice or pine nuts on the top? I would like this to be really yum, it is for a dinner party.
