'Red Rice'

Fry the bits and pieces from your fridge - ie bacon, onion, garlic, courgette, peppers, mushrooms, tomatoes etc Add to cooked rice and sprinkle cheese on top!

Tastes different every time!

Pasta with tuna, peppers, sweetcorn, tomatoes, whatever else is going, plus spring onion, garlic and mayonnaise.

Has been staple "what we eat when we can't be bothered to make proper food" for DH and me for about 25 years now .

Were veggies (and I dont cook, at all, ever) But dp just coks loads of pasta with gravy granuels in the water, and mixes it with frozen veg and cheese. we tend to just have quorn pieces with a tikka masala sauce (or other jar'd sauce) and pasta most of the time.
Or cheap CHEAP asda pizzas with extra cheese, mushrooms and quorn pieces on top.

Omelette

Cous cous with tinned chick peas and sauteed veg.

Pasta, either with a sauce I made earlier and bunged in the freezer, or a tinned sauce, or simply with egg and lots of parmesan (aka veggie carbonara).

"Picnics" eg. lumps of cheese, olives, tofu, raw veg sticks, chopped tomatoes in olive oil etc. artfully arranged on a plate and served with bread/toast/breasticks.

Tinned chickpeas drained and served with chopped tomatoes, chopped spring onions, whatever other veg you like and dressed with olive oil and a smidgen of balsamic vinegar, salt and pepper. Ditto for cannelini beans. Serve with bread.

Fried eggs with steamed asparagus or broccoli florets to dip in the yolks, served with butter and shavings of parmesan.

Eggy pasta

Cook pasta (small shapes work best)

When pasta is cooked and drained, return to pan, break egg (1 per person) into it and stir around. add grated cheese, stir some more. Egg in theory should cook in the neat given off by the pasta. If it doesn't cook though, turn the heat back on and give it another couple of stirs around (add a knob of butter if you do this though). Remove from heat and serve, with ground black pepper (optional) and more parmesan cheese.

I sometimes give the egg a quick blast in the microwave so it's half cooked before pouring it over the pasta. Saves a bit of time and the pan gets less encrusted.

Not one for the little ones due to salt content and general rubbish, but this is a guilty pleasure in our house and probably likely to prove a hit with teenagers: Noodles and Eggs

Fry loads of garlic in a bit of butter and oil. Add a packet of instant noodles per person (one blue dragon chicken and chilli and one won ton seems to be most popular round here, mushroom is also good)and slosh on lots of boiling water, no need to measure. Adjust flavouring with soy sauce, sesame oil, sesame seeds, black pepper. Crack eggs into the mixture and simmer until eggs are cooked however you like them. Give chilli fans a tube of instant chilli or some hot sauce to splash or squirt over before eating.

I used to love cooking before I had my LO's and would spend hours in the kitchen so was quite indignant when I asked dh which of my specialties he liked best and he thought for a bit and said "noodles and eggs"!!! My dad likes it too although he's only allowed it on special occasions...

My favourite comfort food is cheese and tomato rice which basically does what it says on the tin, or savoury rice gloop which involves mushrooms, onions, garlic, a tin of mushroom soup and lots of cheese and black pepper. You can add tinned asparagus if feeling extravagant. And curry powder if you're after a sort of veggie Chicken Divanish effect. I do it without the mushroom soup and with cream cheese for ds and he's pretty keen.

Oh and if I'm ill, instant mashed potato with cheese, peas and a poached egg does the trick for me.

Hope my mother isn't reading this...
