for ds2's teacher for their class party. Only need to make a small amount.

puff pastry rolled over a rectangular/square tin,
spread over with tom paste/not too runny passata, little bit of pesto perhaps, thinly sliced courgettes/cherry toms, grated cheese/blobs of goats cheese and bake in oven for 15-20 mins until golden round edges.
Cut into little squares when cold.
Keeps in fridge overnight if can?t be bothered to make early morning -although takes hardly any prep.
Bit like pizza but a slight change. Looks fab too

Roasted veg cous cous. Roast a couple of peppers, onions, courgettes, aubergine, garlic until burnished. The toss through some cous cous with some dressing. Keep some for you and a small dish for teacher.

dont have much in my cupbaords, but dont mind getting stuff. Teacher was passing round the list of party food and I asked her if she would like anything "nice" as the kids would have all the party food and she said "anything veggie". i know she cant eat anything pork

For party food something like a leek and potato tortilla cut into bite size pieces is nice. I crumble some goats cheese over the top before grilling. Bit like quiche without the pastry I suppose but I prefer it
