I know that this will seem a bit stupid/poncey buit can you use sparkling wine to make risotto? I love really fancy some for dinner tonight but I've only got red wine or sparkling white and I don't want to go to the shops again.

Cheers

Not sure, but recommend keeping in a bottle of dry martini in future just for risottos, as it keeps for ages and works fantastically.

how do you make risotto anyway?

If you shake the sparkling wine in a container and release the gas slowly it will be flat in no time....

White. If you have to open a bottle of champagne, so be it. It won't keep, so you will have to knock back the rest as a charitible gesture.

red would make an interesting coloured risotto...

I have been known to select risotto for our supper just so that I can open a bottle of wine grin
