Duck eggs - fantastic fried - what else?

Local butchers sells duck eggs - about twice size of normal egss. They are delicous as fried eggs (in duck fat!) in between two thick slices of bread or soda farls.

I'm thinking they are about 2x the size so has anyone used them to replace hens eggs and if so what type of baking? The yolks do seem to be diproportionatly bigger than the white though.

They are perfectly fine for baking -- just adjust quantities to take account of overall size of egg.
