what kind of chicken? if it's breast sized pieces or bigger you could do a yummy roast with potatoes and a winey sauce? and peas, I love peas.

if you want to go for BD, don't make too much card food... suggst steak and salad - why not make a quick herb butter to put over the top of the steak and follow by my fave pudding.... melt a toblerone and whisk in some cream... dip in strawberries/marshmallows/pieces of fruitt... divine....

you can do a really easy roast chicken with breast pieces, it's better if they have skin on though. just saute them in melted butter with a squashed garlic clove or two and some herbes de provence or just rosemary until they are brownish, do the same with some small peeled potatoes, they don't need to be parboiled. stick it all in the oven for 30mins or so.

when it's cooked take the meat and potatoes out of the dish, tip away about half the juicey stuff and keep the rest, put it in a pan on the hob.

add a glass of white wine, or rose would probably be ok, simmer for a few mins until its reduced down. season with salt and pepper and pour over the chicken and potatoes.

Serve with crusty white bread and a green salad. (or peas if you love them as much as I do)

Stick the chicken in a mixture of olive oil, lemon juice and garlic now, leave it to marinate for a few hours and then fry it slowly when you want to cook. Easy and v tender. You can't mess up mash, cut potatoes into cubes, boil until soft and mash with olive oil, butter, salt and pepper, add grainy mustard if you like it. You could either have salad or some veg with that.

Blimey - you're married to a Chef and he's home in timme for tea!

Where does he work?! My dh is a Chef, and I'd love him to be around more at dinner time.

Report
jessicasmummy · 02/02/2005 12:49

he's an army chef.... their tea time is 5pm-6pm so unless he is what they call "duty chef" he always finishes between 5 and 6 - otherwise it can be as late as 8pm but thats only about 4 times a month! I hate the late ones, but its a part of the job!!!
