Ok you cooks.. how can I make this tasty?

I have some rice, butternut squash, carrots peppers and onion... what shall I do with it to make it into an interesting/tasty meal for dd (5) and ds (nearly 3)?

i'd roast all the veg. have you got any garlic, if so throw that in too. then cook the rice & serve with roast veg.

You can make a curry with squash. The tricky thing is cooking it - I find it's easiest to slice it open, put spices and oil on it, and roast it, then cut it up when it's cooked. Maybe just stir-fry it with the other veg?

(I tend to just make puree with squash, then use it, as pumpkin, to make cheesecake or cake.)

how long to roast the veg?

butternut squash is sposedly very good for you Coddy!

about an hour to roast the squash, at about 200deg.

With squash, it depends how big the chunks are. 45 minutes at least.

Roasting all of it is a good idea, will make it all sweet.

Or if the rice is suitable for a risotto (arborio or even pudding) you could roast the squash meantime, chop the other veg finely with some garlic, saute all that in olive oil, make the risotto and add the chopped roasted squash at the end. I'd add some flat-leaf parsley or coriander at the end too...

no it's 'wild' rice marina so don't think will make a risotto.
