Brudgies

I don't have all the ingredients for Suzywong's brownies and it's too cold to go out for them. This is perhaps second-best brownie to hers, so I thought I'd share.

Brudgies; half brownie, half fudge

225g butter
170g cocoa powder
450g caster sugar
4 eggs
1 teaspoon vanilla
340g flour
1 teaspoon salt
115g walnuts

Melt butter in a saucepan over medium heat. Add the cocoa and stir until smooth. Add sugar and mix well. Remove from heat. Add vanilla.

In a seaparte bowl, mix flour, salt and nuts. Add dry mixture to the chocolate.

Spread batter in a well-greased 9x13" tin and bake for 20-25 minutes at 180C or 350F (couldn't even guess a gasmark). Don't overbake them, they should be soft and fudgie. Let cool in the pan 20 minutes and then cut in squares.

Oh my, must make some!

I forgot a step.

After mixing the sugar into the chocolate:

In a small bowl, beat the eggs and stir in a small amount of the chocolate mixture. Stir the egg mixture into the saucepan and beat until smooth.

Then do the dry ingredients!
