Courgettes - anyone any quick/easy recipes?

I've got a bag load of courgettes that were on offer, some of which I put into soup but I still have quite a few left. Any clever mn-ers got any easy recipes?

doing this from memory at work in the moment,
half courgette and scoop out pulp inside.
tin of tomatoes some garlic, onions and the pulp put all in pan with little bit of oil and get hot then put in the courgette ( where youve scooped out the pulp) and cook in oven for 15/20 mins on 160 degrees! really nice just hope ive remembered right x good luck

Cook the courgettes in boiling water for approx. 5 mins. then scoop out the flesh to make a little sort of canoe shape, add the flesh to a cheese sauce with some prawns mixed in, then spoon the cheese sauce mixture back into the courgettes. Put them into a baking dish in the oven until the cheese sauce bubbles, serve and eat. Yummy - I could just eat that now!!

ratatouille?

(no fat version)

chop onion, couple of courgettes, mushrooms, peppers

put in pan with tin tomatoes, tomato puree, garlic, basil, oregano, rosemary and a bay leaf

boil and simmer

oh goodness that doesnt read right, dont put courgette in pan put stuff out of pan in the middle of the courgette!!!

how about courgette gratin? just cover in cheese sauce and bake?

Grate it, add lemon juice and basil, marinate in fridge for a couple of hours, makes a nice salad. You probably don't want more than a courgette or two's worth of it, though.

Courgette and Tomato Gratin

Serves 2

4 medium courgettes, sliced
2 tbspn olive oil
1 glove of garlic, crushed
4 oz cheese (Cheddar or Mozarella) sliced
4 large tomatoes, skinned and sliced (they're easy to skin if you put them into boiling water for a few minutes)
4 tablespoons grated parmesan (or more Cheddar)
1 teaspoon dried oregano

In a large frying pan, heat the oil and sautee the courgettes and garlic until the courgettes are golden (don't let them burn).

Arrange layers of courgettes, cheese slices and tomatoes in a casserole dish

Sprinkle on the grated parmesan or Cheddar, oregano, salt and pepper and bake at 190c/375F/Gas Mark 5 for 30 minutes.
