egg fried rice

The way I make it is to boil the rice, fry an egg like an ommlette and add rice. It could be done a diiferent way though.

For the best result, make sure the rice is cooked and cooled beforehand so it won't stick together when frying.

Ingredients
1 egg
2 tsp sesame oil
2 tbsp vegetable oil
200g/7oz long-grain rice (uncooked weight), cooked and left to go cold
100g/4oz frozen peas, defrosted (rinse under warm water to do this quickly)
4 spring onions, finely chopped
100g/4oz bean sprouts (optional)
1-2 tsp soy sauce
ground white pepper

Method

  1. Beat together the egg and sesame oil and put to one side.
  2. Heat the vegetable oil in a wok or large frying pan. When it's shimmering and almost smoking, add the rice and stir-fry for about 3-4 minutes until completely heated through.
  3. Add the peas, spring onions and beansprouts, if using. Stir-fry, turning the rice constantly around the pan, for about 3 minutes. Season well with soy sauce and pepper, then push to one side of the pan. Pour the beaten egg mixture into the other side and leave for about 10 seconds so it begins to set. Using a chopstick, briskly swirl around the egg to break it up and then toss around with the rice. Stir-fry for a further minute and serve straight away.

    Tip:
    You could include some extras like chopped ham, cooked prawns or sweetcorn, when adding the peas.

I like to put in chopped spring onions or sometimes beansprouts. You could use butter to fry with although I don't know what it would taste like! You could use seasame oil to fry!

do you think it would be ok if i added some flaked salmon? im trying to use up some stuff i have in the freezer

I add bacon - not traditional but nice. This is how I do it:

Beat an egg, tip it into the hot wok and swirl it round, when cooked tip out. Chop the bacon and fry it, tip it out. Then add a bit more oil to the wok, fry onion/garlic/ginger and chosen veg till almost cooked, season well - I add a bit of sugar or Chinese cooking wine. Use common sense when cooking the veg - add the harder veges first then the quicker cooking ones. I use whatever vege is in the fridge - pepper, courgette - but cut it up into similar size pieces, parboiling those veg which take longer to cook like beans and carrots first, and always add peas! Add cooked rice and stir well until rice is broken up and heated through, tip a bit of soy sauce in (not too much as bacon is salty), add bacon and egg, break up the egg and keep stirring until it is all hot and mixed together. Taste and adjust seasoning. Serve with extra soy and chilli (my mum likes Tabasco). Cooked chicken would work as well.

Salmon I think would make it more of a kedgeree!

but the fried rice recipes do sound lovely.
