Please help me eat my veg box!

I bought a veg box this week, one with seasonal local produce so didn’t know what was in it. I’m now at a bit of a loss what to do with it all!

It contains
Giant cauliflower
Kale
Sprouting Broccoli
Carrots
Parsnips
Potatoes
Celery
Parsley

I’ll use some for soup but would love some other ideas instead of my basic roasted root veg and cauliflower cheese. I have a decent supply of store cupboard lentils/beans/spices etc. and can add meat.

Lentil soup - carrots and celery

Broccoli sprouting - quiche. With blue cheese if you have

The rest I would use as sides to whatever

Winter slaw
Curried parsnip soup
Cauliflower korma
Roasted cauliflower
Celery and carrots as base for pretty much every stew/casserole (plus onion)
Kale crisps (I like W smoked paprika)
Garlic kale
Kale/sweet potato/butternut/lentil warm salad

Cauliflower is lovely in a curry or roasted in wedges.

Maybe a tagine type thing using the carrot, parsnip and roast cauliflower.

You could use the kale to make a veggie cannelloni with ricotta. Use some of the celery and carrot in the tomato sauce.

I made celery and potato soup with my excess veg box celery.

Kale and potato mash is a favourite of mine, possibly even as potato cakes or bubble and squeak.

Thank you @Caspianberg love the quiche idea I’ve never made a quiche before and curry night would use up a good lot. I’m stuck in a rut cooking the same things all the time. Off to google some recipes now!

Roasted cauliflower served with (optional chickpeas), tahini, lemon juice, chopped fresh parsley and pomegranate seeds.

Massage the oil and vinegar of your choice into washed kale and mix in roasted carrots/Parsnips /celery. Top with some toasted nuts/seeds and cranberries. Maybe a bit of orange juice in the dressing. Could also mix with wild rice and/or feta or Goat's cheese or halloumi.

I eat broccoli with anything! But could do cheesey mashed potato with it, add a bit of basil pesto?

Have started on the curry thank you all for the inspiration!

Cauliflower popcorn! My kids go nuts over it - smallish florets, roasted with oil, salt, breadcrumbs and paprika.

Kale makes a great pesto, with lemon juice, cashew nuts, olive oil, garlic, salt, pepper - blitz together!

Who is your veg box from? Riverford have loads of good recipes on their website, there's a recipe for kale stalk pesto there right now!

Put the carrot and some celery in a casserole with the meat of your choice.
Cauliflower cheese is classic and fab with sausages. Or pakora is awesome and incredibly moreish.
Kale and broccoli I'd just have as sides. Kale chopped up and fried with garlic and bacon or chilli is great. Broccoli steamed then mixed with garlic, chilli and anchovies are also good. You could bulk out with pasta as well.
Parsnips are best fried or roasted to bring out the sweetness or in a soup.

That’s it! I remove any thick stems, slice it finely and stir fry in butter. Then just stir it through mash.

Kale is fab in curries-I use it like spinach (finely chop and throw in near the end) but allow a bit more time.

So many good suggestions I’m really excited about this week’s dinners! I’ve done a curry for tonight (not convinced it’s the best recipe could have done with a bit more spice I think) and while I was doing that tried kale crisps for the first time. Not at all what I was expecting they’re delicious, so much so I’m going to have to grow some kale this year.

So grateful for all the suggestions I really was in a food rut.

@JaninaDuszejko it’s from a little local farm who used to only supply restaurants but since lockdown have been doing boxes to the public.

Re kale, how about Chinese "seaweed" ?
Remove the tough stalks, mix a little salt, caster sugar & ground ginger, toss through the kale, spread out on a tray, spray with a little oil, hot oven for 3-5 minutes.

tried kale crisps for the first time

DH roasts cabbage and kale, it's my favourite way to eat red cabbage. Toss in oil, salt and pepper then blast in the oven for 10 mins at high temp.

I think I'd do a parsnip and potato rosti, maybe a curry, a vegetable terrine maybe or a caramelized carrot tart tatin.

There is a lovely French recipe where you dice onions, celery and carrots really finely. fry them up and then add green lentils and stock. Cook until the lentils are done and the stock absorbed. Add lashings of parsley and pepper. Salt to taste.
