Accidentally ordered 2kg of courgettes instead of 2 in this week's shopping 🙈

Good food website has a lovely recipe for courgette lasagna.
Courgette and feta fritters are lovely, also courgette and cheese muffins.
Chop them up, fry them off with peppers and onions and add to cous cous.
Also courgette fries, cut them into sticks, pat them dry with kitchen roll, flour, egg then breadcrumb and bake them. I’ve also chopped them into chunks and done this then used the instead of chicken in a katsu curry.

Love them. I roast them with onions, peppers, tomatoes and have them with meat / fish. But recently topping some soft cheese on ryvita with the roast veg x
We make a courgette "bake" and serve with meat. It's basically lightly caramelised onions, courgettes (cut into circles), chopped tomatoes, mixed herbs and anything else to make a basic tomato sauce. Top with breadcrumbs and cheddar cheese and bake for 20 mins. Great side dish with things like a pork chop or chicken!

Its like spaghetti carbonara but with grated courgette - yum
Bean pilaf
It's 200g bulgar wheat.
1 onion
1 courgette
3 cloves garlic
200g runner beans
140g cherry tomatoes
Vegetable stock
Cook bulgar wheat in water
Meanwhile cook onion and courgette for 5 mins till soft. Stir in garlic and cook for 2 mins.
Stir in the beans, tomatoes and stock, bring to the boil, cover and simmer for 6 minutes till tomatoes are losing their shape.
Then put the bulgar wheat and veg together and cook for 2 minutes
I grow them and have an explosion over summer, feel your quandary.
This is the most fabulous cake recipe ( do wring the grated courgettes out in a tea towel and leave on the draining board for 30 mins or the cake will be too moist) I use normal sugar. Really moist, easy cake that is a winner. I also make relish and pickle they are great in both

Instead of rolls I layer like a lasagne. I also add beef mince sometimes too. So nice!
Use instead of quite in veg bolognaise. Put it through the cheese grater. It tastes divine

Wow thank you all for the ideas! Those of you suggesting courgette cake has just reminded me I made a lovely moist courgette and cream cheese cake (sainsburys recipe) a few years ago! I love baking and totally forgot about making a cake with them!
So far I've made a huge batch of veg pasta sauce, blitzed into a smooth sauce which the DC ate thankfully! I've also made a courgette and potato curry. Still got loads left though so will go through all your suggestions!
I had a glut over the summer and I chopped them up and roasted them and then froze the roasted pieces. Over the winter there have been loads of times when I wanted to up the veg content of a meal and was just able to grab a couple of handfuls of roasted courgette from the freezer, it's been great.
But the courgette and feta fritters mentioned upthread of also brilliant.
They are great in curry. We had this hello fresh one last night and really enjoyed it.

I can second the bacon and courgette pasta from BBC good food that @Londonmummy66 mentioned. We had it for dinner yesterday, it was yummy!
I make a dish that I found years ago in a cook book. Cook spaghetti. Fry courgette, onion and bacon then add halved cherry tomatoes. When Cooked add some pesto and a couple of tablespoons of pasta water. Drain spaghetti and serve courgette mixture. It's amazing and really quick to do. I often have left overs for lunch the next day and it's even better!

It is, in fact, impossible to have a courgette crop that is the right size . You can only have none or a glut. See also rocket.
