Two really speedy ones
Nutella Brownie Slice
275g Nutella, 2 eggs, 70g g-free SR flour [I use Dove's Farm or Sainsbury's own] Optional: chopped nuts or choc chips to scatter on top before baking.
Beat together, pour into a lined baking tray, bake at 180C/Gas 4.
In an approx 15x25cm tray this will take 15-20 mins for a squidgy brownie texture, or bake a bit longer for more of a cake-like result.
Peanut butter cookies
200g peanut butter, 175g caster sugar, 1 large egg, pinch salt.
Beat together to make a dough.
Divide into 16, shape into balls and space out on baking sheets, flatten slightly.
Bake for 10-12 mins. Cool on a rack to crisp up.
I usually cook 8 and freeze half of the dough for another go.
Nigella lawson chocolate olive oil cake
Becky Excell has a great website I think it's called 'Gluten free cup of tea for me'. I have never had one of her recipes fail but Dd and I often halve the recipes as they can be quite generous.
I was coming on here to say Becky Excell too. Her recipes are fab, both sweet and savoury. I have pre ordered her first book and am very excited about it.
Nigella’s clementine cake really quick if you microwave the clementines.
