Homemade English pancakes that don’t taste like egg?

I have the world’s fussiest child when it comes to breakfast. He doesn’t like breakfast, but needs to eat something to ward off migraines.

Only wants to eat pancakes but only likes the mixer, ready made type from Sainsbury’s. They haven’t had them in stock for 3 weeks. I’ve tried again and again and every home made one tastes like egg and nothing like the shop bought mix.

What’s your favourite recipe?

Are you adding a pinch of sugar and salt, and/or vanilla? Adding flavouring to the pancake mix will help. Cocoa perhaps?

Can you make them with just flour and milk, no egg. Should work perfectly fine and if he sees no eggs go in, he might be happier.

Can you add chocolate chips? Would he tolerate waffles? It is the same mix but tastes very different in a waffle maker.

This (if the photos attach - fingers crossed) is my sister's pancake recipe. I don't think it tastes particularly eggy, but then I'm not that sensitive to the taste so YMMV. The quantities are a bit approximate (because home made recipe) but hopefully it gives you the idea?

135g of Self Raising flour
50g of sugar
A pinch of salt
A teaspoon of vanilla extract (essential to erase the eggy flavour)
130ml of Full fat milk
1 large egg
2 spoonfuls of vegetable oil

This is my go to recipe for fluffy pancakes. They turn out amazing every time :)

For an English pancake I don’t think it would matter. Look up vegan crepes recipes for egg free options. There are plenty of egg free recipes on the internet for American pancakes too.

I make eggless banana pancakes, is that something he might enjoy? Does he like bananas?

Or you could experiment with egg substitutes, if it's just the eggy taste? E.g. flaxseed 'eggs'?
