(7 Posts)Anyone have a good recipe for a gluten and dairy free cake. I know citrus free is a bit unusual for a fruitcake, but if the recipe contains something like mixed peel but it can easily be left out that's fine.
Last year I made Delia 's classic cake with gluten free flour and vegan spread and left out the peel but it wasn't quite right.
I'm making this one for the second time, this year. I use apple juice in place of the citrus juice, so it still has some zing. You could replace some of the flour with gf flour and the rest with extra almonds. Dried cranberries or sour cherries might add a bit of interest in place of peel.

This one is tastes good and holds well. Substitute orange juice with apple juice so you get the moisture.

Thanks both @Fivemoreminutes1 does using the rice flour make it gritty at all? I haven't used it on its own before.
No, not gritty or grainy at all.
Christmas cakes are pretty much fruit glued together by a wee bit of cake and slow cooked so they're pretty forgiving.
