How to make baked potato that isn't crispy?

All recipes I read say to put oil and salt over the skin to get it crispy but i don't want it crispy. I had a stay in the hospital and the baked potatoes they had were so nice and I'd like to make them at home. They were light coloured and the skin on them was soft but every recipe I look at they're dark and crispy. Anyone have any ideas?

Just cook them in the microwave, not in the oven?

Haha! I love crispy potatoes and yesterday I decided to try to cook them in the slow cooker. I wrapped them in foil like every recipe said, left them in there for 8 hours and when they came out I might've well just put them in the microwave! The skin was like on a boiled potato. I put mine in the oven for 20 minutes and it was still so soft 😂

Yeah microwave or slow cooker. Or just boil a big potato with the skin on.

Crispy skin is the best part of a baked potato!

@loutypips I was thinking about using foil but I read on one website that it steams them making it more like a boiled potato lol

@BilboBercow now I'm curious how long it would take to boil a whole potato but I its not quite the texture I'm looking for haha

Don't forget if you are putting it in the microwave prick it with a fork several times.

Smaller potatoes and oven not quite so hot (maybe 200C) so the outsides aren’t crisped up by the time the inside is cooked.

Prick the potato a few times with a knife or fork.
Put on full power for 4 mins, turn over and the then another 3 mins (timings depend on size of potato). Enjoy! Do not put foil in the microwave unless you want to see lightening Grin

I’d do microwave then finish off in the oven for 20 minutes.

Depending on the size 7-10 minutes in the microwave.

The slowcooker potatoes were... interesting. They were softer but less wet than boiled and a strange brownish tinge to them. They tasted fine once they had chilli on them!

Make them in slow cooker or microwave as mentioned or wrap in foil/ put in covered dish in the oven with a bit of water

Boiling doesn't give the baked potato taste - just wrap in foil if you bake in the oven or do in micro-wave.

My friend used to work in elderly care as a cook they put the potatoes in a tray with a little bit of water and they bake/steam and are delicious and soft

@Mrsjayy maybe thats how the NHS do it then as I imagine they aren't putting each single one in the microwave lol.

I will try a few of these ideas and see what I like best. Thanks everyone Smile

I always use foil and they are never crispy
