SOUP!

Any soup recipe ideas?!

I've just made a lovely pot of comfort food of lentil with vegetable soup.
I usually just chuck what I want in but it's around these quantities
Either 2 onions or 1 leek
250g lentils
3 carrots diced
Couple of potatoes diced
Turnip or swede diced
1.5l stock ham preferred but I used vegetable stock pot today.
Chuck all in and allow to simmer until veg cooked.

Or DHs favourite is spicy butternut squash.
Oven 180. Peel and chop 1 butternut squash (around 750g). Place on baking tray with a drizzle of olive oil and cook around 30mins.
Add 2tbsp oil to pan and add 1 chopped onion, 1 carrot chopped and cook 5 mins.
Add 1 crushed garlic clove, 1 chopped red chilli and 1tsp chopped ginger. Cook 5mins.
Add around 350g diced potatoes and 2pints veg stock. Cook 15mins.
Add roasted squash and simmer 10mins. Blend and serve. Dh adds a drizzle of cream.

Bought a butternut squash the other day for this very purpose. Differently to Sweetpea, mine is onion, bit of garlic, squash, stock, cumin and coriander. I will add the leftover bit of sweet potato loitering in the fridge too. Blend and thin as needed.

The temperature here in NE Scotland has gone back up to the 20s so soup seems mental buuut last week when it was cooler, I made an absolutely delicious roast tomato soup.

I didn't add any if the extras, cheese, milk, cream etc but I did add a drizzle of balsamic glaze at the end and had with a crusty white roll. It was ace.

I would have chicken soup with nice fresh bread.
Or nothing with it and a comforting pudding after such as crumble or rice pudding Grin

Looking forward to trying these 😊 I have a soup maker but usually do the same 2 recipes; vegetable or leek and potato 😋
