Idiot proof apple and blackberry crumble?

Accidentally posted this in chat until I remembered this topic!

We have all of the blackberries (all of them!) growing in the garden at the moment, and dd (nearly 3) is obsessed with picking them. Which is all good and well, but I now have containers upon containers of them languishing in the fridge.

Really want to attempt a blackberry and apple crumble ( preferably with her help!) but I am to my shame, a terrible terrible cook. Stir fry and banana bread are about as far as my skills stretch...

Has anyone got any absolutely idiot proof recipes? I've got a child free morning tomorrow so hoping to buy ingredients.

I second the recipe posted above. So much better if you pre cook the crumble!

Good quality firm eating apples, peeled cored and chopped
blackberries

place into ovenproof dish

Whizz equal quantities of butter and plain flour in the food processor - I usually use 200gms of each. Then add 2/3 of golden caster sugar. (so if you've used 200gms of butter and flour, use 140gms of sugar)

Do not overprocess. You want texture in the crumble.

sprinkle crumble topping over fruit mixture.

Put in oven at 180c for 40 - 50 minutes.

Leave to stand for 10 minutes before serving.

I do my crumble topping by hand - a little over half of a 250g block of butter, softish and cubed, a generous shake of flour so the butter in the bowl is covered but not swamped (am afraid I can't give quantities, it's very much by instinct), shake of brown sugar on top of that, shake of oats, sometimes a little cinnamon. Then crumble it in (not rubbing in like for pastry - lifting it out of the bowl and shredding it between your fingers), adding more flour as required. The crumbs should be largeish rather than fine and there shouldn't be any dusty flour left over in the bowl. I pre-cook the fruit (just the fruit and a little brown sugar in the pan) and bake the whole thing for half an hr at 200C, with the grill setting on for the last 10 min.

Honestly, crumble is the one think that has always been my nemesis (and I'm an epic baker). It just always seems a bit rubbish when I make it. So personally I'd do a pie or a cobbler instead!

Waitrose sell tinned apples. Just saying. I'm a fairly competent cook and I'm not above using these in a crumble, but I hate peeling stuff!

Nigella's How to Cook has a great crumble recipe although Tesco sell a great premade crumble mix then you don't even have to peel the apples, just cut them small enough. You can blitz the fruit in the microwave for 5 mins and drain off any liquid, add sugar (or not, or honey) then cover and cook for an hour.

Delia doesn't peel her apples for a pie. I saw that on telly and have adopted it Grin

I put in quite a lot of oats as we really like it that way and my dd lives rubbing the crumble into breadcrumbs, it doesn’t matter what it comes out looking like as it’s always delicious Wink good luck

I just do half fat to flour, plus sugar to taste, in a food processor very quickly. Chuck it over frozen raspberries or any other raw fruit, which has been sprinkled with sugar if it's a tart fruit. Then either bake immediately at 180 for 40 minutes or leave on the side until 50 minutes before you need it.
