I have a random aubergine and not sure what to do with it. I only have veg mince or turkey mince - would it work do you think to make a (completely inauthentic I know) moussaka?

Yes I think it would be fine. My fave aubergine meals are parmigiana and aubergine and potato curry or aubergine and lamb curry. You could also make baba ganoush Which is a dip.

Find the BBC’s ‘burnt aubergine chilli’ recipe. Game changer.

We had chilli a couple of days ago, so not sure I'll make that tonight but it looks really good! Will definitely buy an aubergine for next time I make it.

Can't believe I didn't know what parmigiana is - it looked lovely! Definitely one to make for the future too.

Burnt aubergine curry sounds fab. If I use dried red lentils do I have to cook them first or just chuck in??

Minimalist bakers chickpea and aubergine stew is fab

I only tried parmigiana coz someone on come dine with me won with everyone commenting on the parmigiana. It’s nice on its own with salad or as a side dish.

This is a frequent meal I make... I serve with white rice and some Asian (or any) green veg. So simple and delicious!
