What's your favourite risotto recipe?

Love a good risotto. Mine is this BBC butternut squash and sage one but want to learn a few more.

I usually do leek and pea (using homemade chicken stock and loads of Parmesan)

Ooh leek and pea sounds delicious. Do you sauté the leek first? Then add the rice, stock and peas at the end?

Jamie Oliver turkey risotto. It's our boxing day fave. Creamy risotto with leftover Turkey , stuffing, gravy and veg (sprouts/carrots). We sometimes put in gammon too. Sounds odd but honestly amazing.

Primavera: start with pancetta and onions and diced courgettes. Add butter and rice and vermouth, then cook rice one ladle of stock at a times. Near the end add peas (and optionally skinned broad beans) and chopped mint. Can also add sliced French beans before start cooking rice. Sprinkle crumbled feta before serving.

Leek and pea: sauté onion, garlic and leeks and a good slosh of vermouth or white wine, add rice, then hot stock. Peas at last minute and then loads of grated Parmesan as it comes off the heat

Pumpkin risotto from the river cafe book. You can use squash when pumpkins aren't in the shops. Absolutely delicious 😋

My favourite has asparagus, broad beans, peas and jarred artichokes, but nobody else will eat it so I don't get it very often.

My favourite is beetroot and feta risotto now taken to cooking it in instant pot.

I love lemon and rocket.

Teen we do that too! I dry fry pieces of turkey skin I've put aside till they're crispy and put them on top as a poncy cheffy garnish! Grin
