What’s your favourite vegetarian/vegan meal?

DH and I want to start eating less meat.
He LOVES a meat based meal, so I want to find some tasty recipes for us which have less meat. I’m also trying to lose weight so nothing too fatty!
Family friendly would be good for some options too, to have with the kids, but happy for spicier stuff for us 2.

Hard to nail but top three would be
Pasta arabiata
Shakshuka
Baked butternut squash falafel in pita with salad
Veggie chilli with rice

Over the last few weeks I have cooked

Tomato curry
Variations of gnocchi bake with tomatoes/mozzarella, possibilities are endless
Ramen with Chinese greens, broccoli, cabbage
Tomato and broad bean orichettie
Daal - look up @cookinacurry on Instagram
Warm squash and harissa salad
Green mac and cheese (Jamie Oliver)
Sourdough toasts with feta, broadbeans and mint
Shakshuka (I always cook the tomato sauce in advance to get good flavour)
Turkish eggs (Nigella)

My favourite dinner is the Buddhist chef's Tofu with spicy peanut sauce. I had it tonight with brown rice, it's also good with noodles. I really love it!!. I hope the link works.

We try and eat vegetarian 3 times a week at least for carbon footprint reasons, but DH is very much of the "where's the meat" kind of mentality. I often use a small bit of meat as flavouring which is usually enough to satisfy but you asked about veggie meals - our favourites:

Fajitas with peppers, onions and refried beans
Tomato, olive and goat's cheese clafoutis
Quiche with spinach and goat's cheese
Chana masala
Tarka dhal, rice, yoghurt and lime pickle
Paneer tikka masala
Roast harissa tomatoes on lemon yoghurt
Veggie paella (look for recipes for arroz con verduras)
Warm butter bean and tomato stew, topped with crushed tortilla chips, avocado, feta and coriander
Spinach and feta filo triangles
Asparagus and gruyere cheese filo strudel
A massive skillet of kale fried with onions and fennel seeds (and if you are doing meat as flavouring, a bit of pork sausage or chorizo crumbled in)

Burrito / enchiladas, I do mixed beans with loads of smoked paprika and / or chilli, brown rice, veg such as carrots, baby corn, sugar snap peas, or roasted courgette and tomato, grated cheese, mashed avocado / home made guacamole, the family build their own wraps at the table. Or make the wraps up, cover with tinned tomato and cheese and bake.

My absolute favourite is butternut squash peanut butter dhal, which uses a couple of recipes added together and then tweaked. It's soooo good served with sticky rice and you can dial the heat up or down using chilli flakes so it's suitable for everyone.
