I know that natural yoghurt has been suggested before (but I have none in the cupboard and corner shop doesn't sell it)....anything else I can put in the dinner so that DH and DS1 won't turn their noses up with disgust???

I think adding a potato to it helps, (or is that if it is too salty)?

potato is for salt .. but will probably take the spice out a little

Sugar takes out spice- try something sweet. Honey?

it's a thrown together dinner using various things I have left in the cupboards/fridge - but the "sauce" is a jar of medium strength enchilada sauce.

Any coconut milk/frozen coconut cream?
Also yes, watering it down with stock may help, especially if it is just flavour spice and not hot chilli spice.
I know it sounds funny, and that potato takes out salt mostly, but something bland like potato would balance out spice too - so try adding mashed potato. Good thickener, too!

Cream or coconut cream, depending on the recipe?

Or just serve with a hefty portion of rice and mix in.

Tomato puree helps too. Either that or yogurt would bland it up a bit.
