I've got nearly 2 kgs... and it must be used up by mid July. What can I do with it, apart from cheesecake?

Thanks.

You can put it in risotto to make it thicker and creamier.

Pasta sauce, use instead of cream or crepe fraiche. I think you might be able to freeze it?

There’s a sort of gnocchi pasta dumpling thing normally made with ricotta but I bet you can use cream cheese

Heat it up and add a load of grated cheese to it, to make a cheese sauce, then freeze it?

Pasta sauces, stuffed chicken, sandwiches, bagels, it's great for making creamy sauces for things like chicken, fish etc.

Spread it on a slice of ham, then roll a gherkin up in it.

I know it's crazy. But we used to get through mountains of these things at family gatherings.

Spinach and cream cheese stuffed pasta shells.

Brushetta con funghi.

Caneloni (spelling?)

White cheese sauce for lasagna, batch make, portion and freeze.

Mix in garlic, mixed herbs, fresh parsley, separate the mixture into small tubs and freeze. Take out one tub at a time when needed to keep in the fridge. Use to spread on toast, eat with a jacket potato, mix into a pasta salad etc.

Stir in some icing sugar, pretend you made a carrot cake but have now lost the carrot cake, eat 'frosting' out of a bowl.

It freezes reasonably well - certainly well enough for using in pasta sauce etc once defrosted

Put it in garlic mushrooms with some parsley and lemon and whack it on toast.

Thank you all for your ideas! I'll certainly try a few things. To those who asked, I bought a 2kg catering tub of cream cheese. It's a brand I love, but this particular product isn't to my liking, hence why I'm looking for ideas to use it in cooking or baking x

Make a tomato pasta sauce and the cream cheese until it's mixed in and freeze in batches. Then you can defrost and add to pasta, chuck in left over ham or chicken.

I use tinned tomatoes, some tom purée, diced onions, garlic, basil and a bit of sugar for my sauce.

Cheesecake

This recipe is delicious, ridiculously easy and uses a lot of cream cheese.

Popeye pasta sauce, it’s an Annabel Karmel toddler recipe but my DC still love it years later. Spinach parmesan and cream cheese.

Could also use it to make smoked mackerel pate which can be frozen.
