Chicken breast inspiration

I've got some cubes / mini fillets and can only think of curry, fajitas and sweet and sour stir fry.

What else do you do with chopped chicken that's easy and mainly uses a well stocked store cupboard???

Honey mustard "chicken tonight"

Make a roux with butter and flour. Add chicken stock a bit at a time at first, whisking lumps out. Add 1 tbsp wholegrain mustard and 1 tbsp honey then cream. Season, let the sauce cook out a bit and add the chicken to poach in the sauce. Taste before serving and add more mustard, honey and seasoning if needed. We serve with mash and greens and it takes me right back to the 90s Smile

Chicken parcels. In tinfoil, butter. Season and flavouring such as
Cajun, blackened Cajun, coriander cumin and lime, garam masala etc, jerk. Depending on your spices. Cook low and slow. Add sliced pepper and onions. Serve as you like, with chips, rice, wraps. Depends what you eat.

Chicken noodle soup.

Yes!!!!!!! Amazing thanks so much I've now got some awesome extras to try for the foreseeable future.

I particularly like the sound of the harissa chicken and honey and mustard one.

Chicken parcels also sound intriguing!!

This is a bit faffy, but got hoovered up.

I didn't have Pak Choi, so I used fine green beans.

I steamed the beans before hand and also pre cooked the rice, that way when you take the chicken marinade out of the fridge it is a case of bish, bash, bosh.

Marinate in lime juice and fresh coriander with olive oil and seasoning. Simply griddle, delicious. I often serve it with a fattoush salad.

Chicken and chorizo spaghetti .... pan with lots of olive oil, fry up the chorizo and chicken, squeeze half a lemon, 2 big dollops of creme freche or cream, crushed garlic clove.. when pasta is cooked put it straight into the pan and mix it all up. The sauce sticks to the pasta.

Add black pepper and Parmesan to serve.
If your dieting, replace spaghetti with courgetti or half and half.

You can also add veg for green, asparagus and broccoli go well just throw it into the pan.

Just chop up whatever veg you like eg leeks and carrot , put in the chicken, add a glug of oil and some salt and pepper. Tarragon or thyme and sage are nice herbs to add. Put it all in a roasting tin and cover tightly with foil and roast for 40 mins, lovely!

Pinching some of these ideas they sound lovely !

We have them roasted with either harrissa / chipotle / pesto / peri peri seasoning with either salad or wedges

Or slice and stuff with Philadelphia and wrap in bacon or parma ham and roast

I love adding chicken seasoning, chopped garlic, spring onions, and chopped mushrooms. Wrapping it in foil and baking in the oven. Quick and simple :)
