Spinach help!

Bought some spinach this week, never cooked with it before! Any tried and recommended recipes?

I stick spinach in everything! If you're making a curry or a pasta sauce, just rip the leaves up and add them a handful at a time. I usually add a whole bag to a curry or pasta sauce, they cook down to nothing.

We also use it in curry with paneer or chickpeas. Also nice in quiche with goats' cheese and red onion.

Perfect. Thanks both. Started with adding to my scramble egg and mushroom lunch but the bag is HUGE.

Curry is a good plan too. Will report back on how spinach week goes :)

Even though my son is now 16 one of our favourite recipies is Paddington's green rissoto (so called because its green and in Paddington's cook book !)

Make a plain rissoto, whilst thats bubbling away make a puree of spinach, peas and mint if you have some. Stir in to the rissoto at the end. Simples!

Day 2 of spinach week:

Last nights dinner of roast garlic and rosemary potatoes went down well with DP and 1/3 of DCs

This mornings repeat of scrambled egg with spinach (only for me) was delicious. Cooked the spinach for a minute first in some butter, then added the eggs.

Still lots left though so spinach week continues :)

I love it raw! Just shred it and use it instead of lettuce, rocket etc
It's especially good with goats cheese and sun dried tomatoes. Maybe add some diced raw courgette for crunch.

Wash some of it then put in a pan, add a little boiling water and heat the pan to boiling. Turn off the heat and crack an egg into the pan. Replace lid.
Leave a few minutes then scoop spinach and poached egg onto a tortilla wrap. Eat it.

I make a lasagne with it but only layers of spinach, cheese, pasta and ratatouille. It's delicious and super healthy

You can boil it (show it the water as a chef once told me) and squeeze it out and freeze it in balls then add whenever you are cooking curry, stew, Spag bol or whatever.

It does not matter that the bag is huge as when cooked it wilts to nothing.

Stick some in a pan on it's own. Let it wilt. Stir it a bit, then keep adding. You will be left with hardly any spinach.

A huge bag doesn't last long if you are eating it to go with something else - I sometimes microwave half a couple of big handfuls with some grated garlic and butter and a teaspoon of water. Or in an omelette (esp with left over potatoes, chorizo, anything you have to hand). Or stir in a curry towards the end. Also nice in sandwiches or salads. We've got some growing and use it most days.

I just made spinach and feta tart. Not all of the kids ate it, but me and the older ones love it.

1 sheet of ready rolled puff pastry
100g cream cheese
150g baby spinach
200g feta

Roll out the pastry on a baking tray and score a 1cm border round the edge. Spread the cream cheese in middle up to the border.

Put the spinach in a colander and rinse with boiling water so it wilts then squeeze out all the excess water and spread over the cream cheese. Cut the feta into small cubes and scatter over the top of the spinach and season with salt and pepper.

Pop into a 200 degree oven for 25-30 minutes.

I make this serve 6 with crispy potatoes and salad.

Fry in a pot (not frying pan) with decent (huge) amounts of chopped onion and garlic. Add salt, a lot of pepper and a few splashes of malt vinegar. Stir in a dollop of cream a couple of minutes before you take off the hob.
Great with fish or white meat
