Left over lentil curry into dhal soup?

I've not done it, but think it would work. Maybe blend it with some coconut milk?

Add liquid. (Water, milk, coconut milk, whatever.) Maybe more oil.

Add more of yesterday's seasoning.

Heat.

Deploy stick blender.

Adjust liquid.

Throw in coriander (or other suitable) leaves.

Consume with ill concealed glee.

I will: remove some lentils and the chicken chunks, heat and add some alpro coconut milk drink, season ,blend, adjust and re add the reserved lentils and now shredded chicken and coriander. Top with a some Greek yoghurt ( I have a Greek yoghurt addiction)

Consume greedily.

Sounds good! Though decorating the yoghurt with the coriander will be prettier.

(Definitely exclude meat or fish from the blending stage. I made that mistake once - never again ...)

That looks remarkably like the dhal I made last week. (There was none left to make soup with ...)

I've always felt that there are few better things in the world than leftovers. Lentil soup is only second to last night's pizza for breakfast ...
