How to make cauliflower and broccoli more exciting

We are veggie but not keen on things like cauliflower and broccoli. I was was thinking a kind of c&b cheese gratin type thing but the dc don't tend to like cheese sauces 🙄 and we don't like curry. Pasta is our go to but I'd like to try new things and make veg like this more appealing. Any ideas?

They are nice roasted with some paprika, esp the stalk.
Or chopped up small and used in a stir fry, (Jamie Oliver did a nice one recently that’s on the Tesco site, just take out the chicken/prawns).

Broccoli hoisin stir fry? Sautéd in garlic butter.

Or tenderstem chopped in a mustard creme fraiche sauce

Can do cauliflower as rice instead, sticky sesame cauliflower bites, breaded spicy cauliflower nuggets

Instead of gratin, you could do a bake in red pasta sauce... just partially cooked/ sauteed veg, add cooked pasta (optional), cover in sauce, sprinkle with cheese/ breadcrumbs mix and bake.

Steam or boil florets without overcooking, olive oil in a frying pan with plenty of chopped or sliced garlic over gentle heat, take off the heat before garlic browns, add smoked pimenton or paprika and put back on hob for just a moment as burns easily, add vegetables and let cook for a couple of minutes to flavour. A dash of vinegar may be added
Add salt flakes

Make soup. Cook chopped up cauliflower and broccoli ( use leaves and stalks) with chopped onion and lots of salt, pepper, butter and a little water.
When soft, blend it and add some cream.
Serve with crusty bread and butter.

Oooh, I love cauliflower.

Have you tried very lightly par boiling it and then battering it?

Broccoli baked with sesame oil then serve with garlic, ginger, soy noodles plus other veg and a protein.

Cauliflower is great baked with cumin, garam masalla, chilli - it's really tasty. Could add this to a salad?

Children like this one,
steam or boil florets in salted water, very important not to overcook, drain well.
When cooled coat in flour, dip in beaten egg, fry a few at a time in hot oil.
Once nicely browned drain on kitchen paper.
You can serve with dipping sauce.

Cut trimmed cauliflower (use leaves & stalks in soup or stir fry) into thick lengthways slices, including the central core to hold slices together. Gently fry slices with some garlic and onion till golden, serve with gravy or onion sauce.

Cook the cauliflower until slightly softened but still holding together firmly then dip in egg and a mixture of breadcrumbs and crumbled blue cheese then bake.

Mushroom and broccoli stir fry, serve with sesame noodles.

Mushroom and broccoli sautéed in lots of garlic and oil and mixed with pasta - can you tell we like mushrooms & broccoli!?

Another thing to try is quick pickled cauliflower - loads of quick pickle recipes online and is lovely in a salad with olives and capers.

Whole head of cauliflower place in roasting dish, mix harissa, olive oil, minced garlic, salt and pepper. Paint cauliflower with paste, cover with foil. Roast in oven for 1 hour ish (last 15 minutes uncovered). Lush

If you steam or par boil the broccoli for a minute of two, you can then stir-fry it. I do it with:
garlic, ginger and soy
or flaked almonds and lemon zest in butter
or chilli and garlic with sesame oil

I pan fry cauliflower in lots of yummy salted butter and shake over garlic salt or granules. Whatever is handy.

I agree with Nigella that the only good cauliflower is a roast one. I love her roast cauli and chickpea salad
