Batch cook meals that aren’t mince

I am looking to make more freezer meals as I have a baby due and it saves money. So far I’ve done shepherds pie and bolognese, both a little drier but turned out well enough.
I don’t want to eat too much mince though so has anyone got any good recipes with chicken, like a child friendly chicken curry or something that freezes well

Butter chicken (very mild curry) and Tuscan chicken both freeze well My recipes are for an Instant Pot but would work on hob/oven
