Inspire me with your sausage recipes please.

I bought a load of reduced sausages which I have portioned up and frozen. What are you favourite recipes using sausages. I usually do with mash or toad, but would like to try something different.

Recently we’ve really been enjoying a sausage and veg traybake.

Brown sausages in frying pan then transfer into roasting tray. Add peeled and quartered carrots, chopped potatoes, sweet potatoes, red onion quartered and a couple of cloves of garlic. Add a tablespoon of olive oil and toss to coat everything. Season well.

Put in the oven for around 45 minutes until all your veg is cooked.

We serve with gravy.

We normally make some sort of bean stew. I also love pasta with sausage - either a spicy tomato based sauce or something more creamy/mustardy. There's a bbc recipe for sausage and kale stuffed pasta shells which is nice.

I do a sausage casserole (I make a big batch and freeze in portions).
Sautè some onions, brown the sausages, add a few tins of tomatoes and a couple of butterbeans or similar, throw in any veg I've got lying around chopped into chunks - leeks, peppers, carrots etc. Simmer down.

Sausage butties with lashings of ketchup.
Sausage, bacon & eggs.
Sausage & mash.
Sausage, chips & egg.
Toad in the hole.

Sausage curry, grill the sausages first then divide each into four. Use a tomato and onion base, with choice of curry powder, fried onion, red pepper and garlic.

Sausage casserole:

cook sausages

Fry onion, garlic, diced carrots, diced green pepper
Add a tub of pasata, paprika, honey, grainy mustard, black pepper
Cook until the carrots have softened
Add either a drained tin of green lentils or a drained tin of butter beans
Add the sausages to warm through

I take the sausages out the skin and make them in to little meatballs, our them in a tomato sauce and serve with spaghetti pasta x

We especially love the chorizo sausages done this way x

My dh makes a Jamie oliver sausage and roasted veg. We have sweet potatoes, butternut squashes, red onions and a mixture of coloured peppers. I think he put in oil and mixed herbs. We're actually having it tonight!

I make a sausage skillet with greens (kale, chard, spring greens, perpetual cabbage all good). Fry onions in olive oil with fennel seeds and chili flakes to taste, add the sausages taken out of their casings to make little meatballs. Fry until everything is browned then add the shredded greens. Usually I add a good 500g greens between two people so I can't toss everything straight away, so I pile it all on top, put a lid on and let it all wilt down. When it reduces in volume toss through the lovely porky, fennely spicy oil on the bottom. Eat with garlic bread to mop up juices! This is a brilliant way to eat up an absolute mountain of greens...

I had a veggie sausage hash on a train once which was nice. Would like to recreate it.

Potatoes, onions, peppers, something green (maybe kale?), sliced sausages, maybe some other stuff.

another vote for La Berry's Sausage Lasagne ...it's a firm favourite here, and no one even knows there is spinach in it!

Sausages, onion and peppers are a go to here. Chop up onions and peppers in chunks. Brown sausages. Chuck it all in a pan with a large can of crushed tomatoes with some spices in. Put in oven for about 45 minutes. Serve with crusty bread.

Sausage "con carne" with beans and chilli - a very forgiving meal, all in one pot, add in peppers, mushrooms or any suitable / left over veg.

Put one descended red or yellow pepper per person in a food processor and whizz til very finely chopped. Add a deseeded chilli if you would like some spice, or some chopped lemongrass or finely grated lemon zest also works well.
Slowly fry the chopped peppers with a bit of olive oil until they are soft and melty.
Brown the sausages then add the peppers, cook on a low heat til the sausages are cooked through and the peppers stick to the sausages.
Lovely with potato wedges and green salad.

Stovies. Layer sliced onion, sliced potatoes, sliced carrots (optional) and sausage meat rolled into balls. Add beef Oxo and water to cover.

I do a tart with puff pastry, spread with mustard, then caramelised shallots, caramelised apples, sausage squeezed out of their skins and put over it and then blobs of blue cheese. Soooo good!

Sausage blues cheese pasta - boil pasta. Fry leeks and sliced sausages, add mushrooms. Crumble in blue cheese and add creme fraiche to make a sauce. Mix sauce and pasta. You can serve as is or make it into a pasta bake.

Sauasge salad. Chop sausages, red peppers, red onion and skin on potatoes into chunky bite sized pieces. Sprinkle with paprika and a slug of olive oil and chuck in the oven at 180 ish (fan) for 20 minutes or so. Mix mayo (store bought is fine) with a clove or two of finely sliced garlic or a teaspoon or so of the jarred stuff and a couple of spoons of white wine vinegar. Serve the sausage and veg mix on a bed of leaves (rocket works well) and drizzle with the garlic mayo.

Sausages and grapes! Barefoot contessa recipe. basically just sausages in a baking tray, top with fresh red and green grapes, add some wine and bake until sausages cooked. It is genuinely amazing.
