Freezing homemade pizza dough?

We make pizzas fairly often. I use a pretty typical recipe, knead for 5 mins and it always turns out fine. There’s a lot of clearing up though (as kids help usually)

Does anyone freeze their pizza dough? I have searched online but just wondered if anyone has any tips. Do I freeze before:after i have left to prove/rise?
Will just be handy if I can make a decent batch up For quick meals 🤞🏼

We always freeze leftover dough usually after a first rise. Defrost in a covered bowl and it will rise lightly again. Stretch out, top and cook as usual.

Yes sure @OldEvilOwl
This makes 2 huge pizzas and 2 smaller ones!

600g strong white flour
2 sachets of yeast (these are usually 7gram sachets whenever I buy them)
400ml warm water
2 tablespoons olive oil

Knead for 5 mins.
I then roll out into the pizza base, then cover with a damp teatowel in a very warm place. Depends on how warm it is, usually takes about 20 mins to rise.
Then add toppings and cook 😋

Why don't you roll out the bases and freeze them in their shape with oiled greaseproof paper between the sheets
When you're ready to use them leave them on the side for like 15 mins before separating them and then topping them

Ps how exciting about the baby xxx

It's a good idea to add a bit more yeast as dough doesn't rise as well when it's been frozen.

My husband woke the baby up at 230 and he always sleeps through the night
I'm fucking furious
And the bastard has been snoring beside me and trying to lay on my pillow as well
I really hate him at the minute

We shape and parbake and then freeze. That way, we can put the topping straight on the frozen pizza and shove it on the oven and don't even have to wait for it to defrost. So easy.

We also use the bags of pre grated mozzarella from the supermarket and freeze the leftovers of them too and freeze left over pizza sauce in ice cube trays. Means we've usually got a full pizza kit in the freezer for easy meals !

@eternalopt I like your style. Homemade pizzas are so much nicer. But a bit of a hassle sometimes ~ i also freeze mozzarella. Good idea about the tomato sauce 👍🏻
