Rhubarb and apple crumble. What to do with the apple

I've cooked up loads of rhubarb from the garden. I've massacred it a bit and over cooked it. So if I slice some apples into a cooking dish and cover with rhubarb then do my crumble and put in oven do you think the apples will cook enough. I would like them to be soft but also add some lumps as rhubarb has just gone all shredded and fine.

Dice the apple and cook it off a little bit in a pan with a dash of water. When it is softish stir through the rhubarb mush and put the crumble on top. I do this when i use fresh apples and rhubarb compote, works great.

That sounds nice. What is the best crumble topping recipe please? Previous efforts ended up a bit dry...

I just use delia, but instead of almonds I use broken up walnuts. I guess crumble by nature is dry. Serve with custard, ice cream or cream. I find the juice from the bottom normal leaches into the crumble at the bottom a bit and makes the crumble at the bottom a bit gooey.

You could make Rhubarb fool.
Rhubarb Gin, with the liquor....
Rhubarb cheesecake if its all mushed up....
Rhubarb Chutney...

I literally just chop the apple into chunks if its an eating apple and throw in it. I'd mix it up with the rhubarb. Then put the topping on and cook.

We had rhubarb strawberry and apple crumble last night. Delish.

For crumble topping I always just mix plain & wholemeal flour, brown sugar and vegetable oil and cinnamon/oats/dessicated coconut if I've got it. Quick, easy and doesn't get your hands messy
