Has anybody got a good almond cake recipe?

I adapted this recipe to add the frozen raspberries and it’s the best thing ever.


Almond and raspberry bakewell loaf
175g butter
, softened, plus extra for greasing
175g caster sugar
3 large eggs
Teaspoon almond extract
200g self-raising flour
Half teaspoon baking powder
50g ground almonds
50-100g frozen raspberries (add to preferred level of raspberryness)

1 Heat oven to 170C/150C fan/gas 3. Butter and line the base of a loaf tin with greaseproof paper. Using an electric whisk, beat together the butter and sugar until light and creamy then beat in the eggs one at a time. Add the almond essence. Now beat in the flour baking power and ground almonds. Stir in the frozen raspberries.

Tip the mixture into the tin and smooth over the top. Bake for 55 mins – 1hr until a skewer inserted in the middle comes out clean. Remove from the oven then leave to cool for 15 mins then remove from the tin, peel away the paper and leave on a wire rack to cool completely before slicing. The loaf will keep in an airtight container for three days.

Oh,I do like bakewell! Was thinking more of the plain almond kind but now....I think I might have to make two CakeCake

Grin @ "three days"...aye right! Prob half an hour in our house. This sounds lovely though and am def going to try it

Rick Stein has a good clementine and almond cake. On the bcc good food website. Can use an orange rather than a clementine

I usually do Claudia Roden's orange and almond cake which is AMAZING! But I fancy the plain traditional kind. I've never made one of those before...
