Easy breakfast baking

I have a hankering for croissants / pastries but not due to shop for a while so wondering if I can make something to scratch the itch at the weekend?

I've seen them making croissants on bake off and it was a right faff so definitely after a cheats version of something I think.

I have a bread maker and yeast and flour (I know!!) and also a frozen puff pastry roll so are there any easy solutions you'd recommend and ideally link to a recipes?

My kids love this baked French toast recipe

Spread 1/4 cup of soft butter on the bottom of a pan. 1 baguette cut into 12 slices to fill your pan

5 eggs, 1 cup of milk, 2 tbsp maple syrup, 1 tsp vanilla, 1/2 tsp salt. Mix this all together and pour over the bread, turn the bread slices over and cover with foil and leave overnight.

Oven at 200 - put in the oven uncovered for 15 mins, turn the slices over and bake for another 10 mins.

Sprinkle over with icing sugar and we serve with warm raspberries.

Not a huge fan of chocolate or Nutella pastries should have said sorry! And don't have a baguette so can't try the toast - but the cinnamon rolls look like a winner!! Don't have pistachios but will sub in chopped pecans yum yum
