What’s for lunch?

I’m a meal planner so have dinner plans down to a fine art based on a fortnightly food shop due to lockdown but am struggling with lunches. Tried sticking to what I normally do for packed lunches but D.C. are being a pain in the arse about it, anyone got a meal plan or ideas for lunches especially in the last few days when we’ve run out fresh stuff? We eat very little meat and dairy and I have a fussy 8yr old....

Plus can you not shop or have someone else buy you some ‘fresh stuff’?

We’re going shopping on Wednesday, just trying to keep shopping as infrequent as poss at the moment and can get a veg box delivered so it’s less about what we have in now and more planning for the next week or so to then get stuff in if that makes sense? I think it’s just the ongoing mundanity of providing so much bloody food constantly!!

We don’t have much time to cook at lunch so my two are limited to quick things. Some of the regular lunches we have are:

  • leftovers
  • cheese toasties
  • peanut butter and banana sandwiches
  • eggs
  • pasta with cheese or pesto
  • fish fingers, in sandwiches or with oven fries
  • pita bread sandwiches
  • beans on toast
  • veg fritters
  • super noodles.

Nachos- I had a 2 person portion of veggie chilli in my freezer which I alternated with nachos, cheese and 1 chopped tomato. If I'd had jalapeños I'd have shoved those on. Grated cheese and whacked in oven! Great lunch for the 4 of us from a 2 portion chilli!!

I've just watched Jamie Oliver make a rosti from grated veg and serve with poached eggs, that looks good.

We also do quesadillas.

As well as these mine love magi chicken quick cook noodles- not healthy but cheap and quick occasionally and makes a change!!

My DD and I love cous cous bowls — just put dry cous cous in a flattish bowl and add boiling water to just cover (can sprinkle in a bit of powder stock if you want) while it soaks up the water get toppings ready and then arrange in colourful sections on top. We have a combination of some of these according to what she likes and what I like (I’m vegan):
Leftover grilled veg
Grated carrots/cheese
Hummus
Pesto
Sweet chilli sauce
Chopped toms/cuc
Tinned sweetcorn
Cold meats
Sliced raw mushrooms
Olives
Salad dressing
...anything you like really! Quick, quite healthy and fun to assemble - has changed lunchtime for my sandwich hating daughter!

We've been having a lot of sandwiches, but also:
Filled pasta
Soup and bake at home rolls
Build your own wraps
Beans/spaghetti on toast
Boiled eggs (if we can get eggs)
Toasties

pasta,noodle bowls
make your own crust and then do some jumbo fish fingers.
ham and cheese tortilla wraps
puff pastry tomato and cheese pinwheels go down a treat you can make sweet ones at the same time to hasve with fruit and cream!
cereal for lunch day is always awinner.with tea too haha.porridge and cereal day has been our most popular!
toasties
shallow pan diy pizza
get a template for a box and make your own mcdonalds
quiche
open sandwhcihes
egg and soldiers or any eggs
pasties
fritter
rosti
get them to join in in cooking and making recipes

We’ve been having combinations of sandwiches, rolls, bagels and wraps but only every second day. On the other days we’ve had soup + toast, pasta pesto, homemade pancakes, omelette and scrambled eggs + toast. Going to add the couscous bowls idea, forgot how much I love couscous, grated carrot, sultanas and a wee spoon of pesto.

That seems okay if your an adult. But suggesting fat burners in a post about family meals is rather in appropriate.

Thanks everyone, I’m def in a rut and these are all simple but great ideas - we’ve done build your own salad bar but I love the cous cous bowl idea (ideal for our house too where I’m vegan and the others aren’t)

Baked potatoes! Save my life. Have them with tuna sweet corn, baked beans, coronation chicken, salad, hummus etc.
Pizza. Quinoa. Scrambled tofu. Omelette. So sick of making lunches!

Fresh pasta

Pitta, hummus & salad
Pitta pizzas
