We're not too fussy but trying to eat well

Chicken biryani
Kedgeree
Greek spinach and feta filo pie
Falafel burgers
Egg fried rice
Sweet and sour chicken and rice
Smokey Boston baked beans on toast or with sweet potato wedges
Stuffed peppers with couscous/mince/rice and topped with mozzarella or feta
Goulash and mash
Stroganoff with rice or tagliatelle

What do you like to eat?

What about doing something like an Indian spread, with a curry, dal, aloo sag etc.

Don’t know what you’ve been eating so slightly tricky to make suggestions!
But, this week we’ve had/got
Linguine with crab, cherry tomatoes, chilli and garlic
Tandoori chicken salad with a raita dressing
Bbq with marinated salmon and chicken skewers with apple slaw, flatbreads and salad
Roast gammon with a mango and chilli salsa, sweet potato wedges, green beans and broccoli
Cauliflower and red pepper curry with rice
Roasted Mediterranean veg frittata with salad
Tuna fish cakes with corn on the cob, and stir fried garlicky green beans

I’m bored of current repertoire too. I saw this on tv last week and am trying it this weekend:

It’s a sort of Mexican lasagne and looked delicious when Mary Berry did it!

This week we had: paneer masala curry, naans and poppadoms, mushroom and Stilton pie with roast spuds, carrots and broccoli, jacket spuds with tuna and sweetcorn mayo and salad, risotto and halloumi, fish and chips

Nothing massively adventurous but over the last couple of weeks we've had...

Vegetable Cottage Pie
Fajitas with dips etc.
Baked Camembert with vegetable sticks and new potatoes for dunking
Teriyaki tuna with noodles and stir fry veg
Cod one-pot with puy lentils
Homemade lasagne
Spinach and feta filo pie with salad
Fish pie
Spinach and chickpea curry with flat breads
Paella
Steak pie

And then a couple of really easy nights - freezer fish and chips, pizza, pasta and pesto etc. I've been making some bread so we've also had a couple of 'picnic nights' with warm bread, cheese, pâté, salad and fruit.

Our new addition recently has been Aloo Gobi. Cheap and easy to make and it's really tasty.

When they were young, the DDs' favourite meal was when I put all the leftovers from the fridge on the table and let them mix and match as they pleased.
It led to some strange combinations, but everything got eaten and it's a great way to clear out the fridge!

Some sound scary or complication, but there are many youtube videos and some are far easier than you think!

  • Tagine
  • Ravioli/pasta from scratch (can be frozen too)
  • Thai green/red or yellow curry
  • Vietnamese pho
  • Summer rolls in a satay sauce (Sainsburys do summer roll kits, otherwise a Chinese/Vietnamese grocer will sell the rice paper wraps)
  • Sushi
  • paella
  • If you have a pressure cooker, I throw in 1/2 tin hoisin sauce, some water, beer or cider and pork ribs. Cook, then when they come out, pour over the other half can of hoisin. They come out and fall off the bone! Grin
  • babotie (Sth African style curried, mince dish)
  • Vietnamese beef salad
  • Sweet sour chicken

Sorry should have also added that this time I put in a can of chickpeas at the end. It's a generous 4 portions without the chickpeas but with them added there was enough left for me and DD to have lunch the next day Smile

I am sick to death of cooking. A lot of the recipes above sound quite complicated and I have a ds who absolutely hates rice, which takes out quite a lot of options. He is pretty much living on pasta at the moment!
