Lockdown tuna fishcake help please!

Running low on stocks however have tuna, potatoes, egg and breadcrumbs so was thinking of doing a fishcake of sorts.

Lots of the recipes I’ve found use mayo which I don’t have.

I have everything to make a cheese/white sauce.

Have sweetcorn, peppers, seeet chilli sauce. I don’t have parsley/spring onions.

Think I could cobble together something? Any help much appreciated!

Got any pasta? Tuna, pasta, white sauce and sweetcorn. Cook the pasta as normal. Make the white sauce. Mix all ingredients and put in oven for 20-30 mins. Grated cheese on top for last five mins. Delicious.

I've used this recipe before. You could swap the spring onions for peppers and/or sweetcorn

Make spanish croquetas! Basically a white sauce that you mix in the tuna, chill really well on a pan, then roll little balls or sausages of the cold bechamel/tuna in breadcrumbs and fry. You can mix anything into the bechamel, salt cod, pieces of ham, spinach...

You could actually make mayonnaise if you have eggs and oil?

Is the mayonnaise just to bind potatoes and tuna together? if so, you could use a very little milk or beaten egg instead. Or perhaps a different condiment, tomato ketchup, Caesar salad dressing etc.

well, not a recipe, but I'd just mix the tuna with mashed potato and and an egg, add any bits you want :)
