Gammon or pork steaks with pineapple salsa or sort of braised in the juice. I used to make something similar years ago I'm sure it was a Delia recipe - pineapple pork?

Blend it into pineapple smoosh. Add lemonade, ice and Malibu. Mix well and drink.

Thanks for the ideas. Sadly no bananas, but a reasonable stocked cupboard otherwise. Its actually leftover from a pineapple salsa we had with gammon lastnight.

The Malibu/pineapple sounds delicious, but I'm 7 weeks pregnant Grin

Make a sponge cake and add the blitzed up pineapple pulp into the batter, oh my it's delicious. Use the juice to make a syrup/drizzle and you have a pineapple drizzle cake. Rum optional mandatory in drizzle

I realised I also have a 1/4 tin of coconut milk, so will likely make a pineapple and coconut cake. Making the juice into a drizzle sounds great too.

I would make sweet and sour sauce - add tomato puree, soy, garlic, ginger, red wine vinegar, sugar, water and cornflour in a little water to thicken.

Or it's probably enough to use for a slow-cooker gammon. Just put in the bottom of the slow cooker, gammon on top, 10 hours on low (I do this overnight). Then glaze with honey and mustard and into a hot oven for 20 mins.

You can also freeze the leftover pineapple in it's juice to use for another time. I do this when making sweet and sour, as I can only get the big tins of pineapple in Lidl, so I use half (pineapple and juice) and freeze half.

If you put the coconut milk in the coldest part of the fridge and use the solid cream part with icing sugar it makes the smoothest coconut cream icing as well. Yum!

I'd make a pineapple upside down cake with the pineapple, and make hot chocolate with the coconut milk (it tastes like a Bounty!).

Thanks for all the suggestions. On 2nd check, the coconut milk had gone off, so I made pineapple and desiccated coconut slice. Delicious as a pre-dinner snack Grin
