Argh no jam for my Victoria sponge!!

Any alternatives you've tried??

I've got marmalade?? Or also frozen raspberries - could I knock up a quick 'jam' type paste?? I don't have pectin but do have some ancient gelatine...??

Have you got any lemons or apples (or both) - both are high pectin fruits and I use both to reduce the amount of sugar?

Have you got icing sugar and butter? Make buttercream and add orange or lemon zest, if you have an orange or a lemon. Or use some cocoa and have chocolate buttercream. Or if you have cream and chocolate, make ganache. You can whip it when cold if you like.

Buttercream instead?
Marmalade and then a lemon glaze icing on top (call it St Clements Cake?)
Cranberry sauce?

Any Nutella type spread, or peanut butter? Or make coffee or chocolate flavoured (with cocoa) butter cream.
Or fill with icecream immediately before serving?
Or serve with chilled custard, creme patisserie etc.
Or fill with with frozen berries and yoghurt?

I'd use butter icing and maybe some fruit - berries would be lovey but maybe some squishy nectarines? Or turn it into a drizzle cake?
