Best ever brownie recipe?

Plain brownie - no nuts or extras and really squishy in the middle. What’s your go-to recipe?

Undercook it a bit and add in frozen chocolate chips instead of walnuts. You can also do a gluten free one by substituting ground almonds for flour. Utterly delic.

Until this week I would have said Nigel Slater but then I used Orlando Murrin's recipe on BBC Good Food and it was better.
I used dark chocolate chips instead of the ones he suggested as I prefer dark chocolate.

These Avoca ones but I suggest substituting the flour for ground almonds, the dark chocolate for half dark and half milk, leave out the nuts and drop fresh raspberries or mini rolos into the tin before baking. They're cooked once they are no longer wobbly in the centre. If I have time I refrigerate them once they've cooled in order to cut them neatly. They freeze or keep in the fridge well and can be refreshed at room temp or with a quick blast in the mw.

These are the best. They're like a set rich chocolate mousse.

Oops you said no extras! So forget I suggested rolos or raspberries. They aren't necessary just an extra level for variation.

@MrsRedFly that’s our go to recipe as well, DD makes them on a regular basis and they’re pretty foolproof and taste amazing!

Orlando's recipe is quite similar to Nigel's but with slightly less sugar.
I have cut the sugar in a few of Nigel's recipes as some of them are far too sweet.

Novice baker here, sorry for a Baking 101 question. Most of these recipes call for chocolate to be melted. Is this baking chocolate? Or will any eating chocolate do? If baking choc then sweetened or unsweetened?
DD12 andI made an easy looking brownie recipe off the internet, which had cocoa powder but no actual chocolate. We're no connoisseurs but it's pretty awful! The hummingbird looks pretty straightforward (and has a short list of ingredients!) so might try that one next.

@NewtoRenting, look for chocolate in the baking aisle. Tesco own brand is actually quite good. Unless you're in the US, there is no unsweetened baking choc available here.
Try the above recipe, it's really good.

completely the best...very agreeable to throw things in of you do want to go rogue...I just made some today with bashed cream eggs in (five for a single £1 in farmfoods!)

I scale the recipe up to one and a half times as my best heavy tin is 9x9 and the mix is just too skimpy as it stands for that tin. PLUS..it uses a whole pack of butter and I like that.

@NewToRenting ..i buy lidl or aldi chocolate...39p or so for 100g...it's decent cocoa solids mostly and the dark stuff is not greasy at all, and if you do want to go the whole hog to 70/80% they also have a decent range that won't break the bank.

Thanks for the replies, sorry I don't live in the UK any more...would kill for a Sainsbury own brand dark chocolateGrin We get most "foreign" brands here but much more expensive. Was hoping to use leftover eating chocolate, as we're in very strict lockdown.
The one we made was similar to what you linked H1978, but I cannot taste chocolate at all...I used Hersheys cocoa powder - not gourmet stuff but that's all I have.
Thanks all for the replies. Will try with whatever eating choc we have, and reduce the sugar so it doesn't get too sweet.
