You basically make a frittata as you would an omelette - add into it whatever you fancy but instead of doing in the pan - bake it in the oven (remember to cook anything you might put in it first ie meat). It tend to rise a little - just bake it until just browning on a fairly low heat then you can slice it.

I wouldn't add garlic but would finely chop some gherkins or put in some capers if you have any. I love potato salad

spinach vr courgette and red peppers nice in a fritatta/frittata

Frittata is spelt correctly, but I've never heard of it going in the oven. It's pan fried, just like an omelette (hence the "fritta" part of the name) and is halfway between a French omelette and Spanish tortilla in thickness terms.

Spring onions and spinach are nice additions, along with feta if you're allowed.

Potato salad with garlic sounds yummy. I often make the dressing with plain yogurt instead of fromage frais, blended with a bit of spring onion and mint for flavour.

a tiny dash of cumin is really nice too, and I add chilli too, but I don't liek bland food.

I do mine on the hob first and then finish it off under the grill - espcially if it is quite thick and taking a long time to set all the way through.
