Caramel sponge cake

Hi!

I'm not much of a baker but it's my husbands birthday next week and due to everything that's going on he's asked me to make him his cake .. but he wants a caramel cake!

My problem is I can't find soft brown sugar ANYWHERE and all my neighbours are on lookout so I'm not going out too often.

I do have caramel essence though, could I sub this into a normal sponge recipe?
Or does anybody have a recipe that doesn't include soft light brown sugar?

This cake is beautiful, tastes very much of caramel but uses caster sugar. In fact it's so caramely that my DD who doesn't like caramel, won't eat it! Perhaps iced with a carrot cake type frosting?

@Appiandterri I was looking at amazon and I almost cried at the price!

I had a cake organised by a professional but it got cancelled, but to be honest I'd rather not pay £80 for only us to eat in with the current lockdown down!

I've winged a sponge cake with salted caramel essence in but we'll see how it turns out!

If not I've got time to try the Cadbury's one thank you @ExpletiveDelighted, unfortunely he does t like bananas @AnnofPeeves but that sounds lovely!

Well I love baking and take cake to work regularly for my colleagues so, once this is all over and people feel happy to eat home baked cakes again, I will try out some of these delicious recipes.

Double it, and use 8" tins if you want a layered sponge! I also freestyle with the icing... And tend to make vanilla buttercream, and drizzle it with toffee/caramel sauce!
