I made a standard daal recipe but half way through realised I didn’t have coconut milk. Just didn’t add it or anything else and it still tasted fine. Not as nice as with the coconut milk but lovely all the same.

Check out Tan France's tarka dahl on Instagram. Couldn't be simpler, best one I've made! I saute finely chopped onions, carrots and celery first, which he doesn't. Super nice.

This one. She tests a series of recipes for the same dish and identifies the best so it is scientifically proven to be the best Smile. It’s a regular here - just don’t stint on the butter at the end.

I must admit I add a lot of butter to the dal as well as the tarka. And I use onions instead of shallots.

MadameJosephine try it honestly it's really good- I was surprised! I tend to now whip up a huge pan of this at least once a week I love it so much!

I was taught this recipe by someone who was born in Bangladesh and it’s pretty simple to make.

1 onion sliced finely
Red lentils (soaked then washed)
Bit of ginger, squashed (optional, I don’t add it)
Garlic cloves (3+ depending on how garlicy you like it), squashed or very finely chopped
Coriander, chopped
Oil or ghee
Salt to taste (add at end)
Green chilli (if you want it hot)

Add lentils and onions in a big pan half filled with water,
If you’re adding chillies cut the tops off then slice in half or if you want it hotter slice into little pieces,
Simmer on very low heat until almost all water has gone,
Stir or mash then add boiling water, stirring until it’s the thickness you like,
In another pan add oil or ghee,
When it’s hot add garlic and stir constantly, not allowing it to burn but so it’s brown,
Pour some of the lentil mix into the garlic and oil/ghee pan,
Warning...a big cloud of strongly smelling garlic will escape so keep doors closed and windows open.
Transfer garlic, oil/ghee and bit of lentil mix back into your main lentil mix pan,
Add coriander,
Salt to taste.

This is amazing and quick - Anjum Anand's quickest ever tarka dal.

I often substitute tinned tomatoes.
