Wild garlic

I’m after ideas to use this lovely smelling stuff that’s appearing everywhere at the moment.

Use it to make pesto
Use it as a filling for fresh pasta
Wilt and stir through scrambled eggs
Soup

Don't mention wild garlic to me! AngryAngryAngry This evil plant is taking over my garden. I bitterly regret ever planting one.

Wash the leaves very well.

Chop up the leaves and use in a salad with feta/mozzarella/goat cheese and Puy lentils. Or chop finely and use to make garlic mayonnaise or garlic butter, garlic bread.

Use in risotto or omelette.

Use in soup, especially bean soups, or in a green minestrone style soup.

Wash.
Chop finely.
Melt butter.
Mix.
Pour onto greaseproof paper inside a shallow tray (so it's no more then 1inch thick).
When cool, chop garlic butter into small cubes.
Freeze.
Then add chunks of frozen garlic butter to various dishes throughout the year.
You can cook it from frozen on top of a fillet of fish... As the fish cooks the butter melts and releases its garlic yumminess.
Or melt a cube in the microwave to pour over vegetables.
Or add a cube to a sauce/soup at the end of cooking.
Or use in garlic bread.
So easy!

I really want to find some wild garlic now... The place I usually go to pick it is a drive away and thus forbidden.
I have been searching for a local patch on my daily walk, but alas in vain!

Use in scones - National Trust has a good wild garlic & cheese scones recipe.
