Wash. Chop finely. Melt butter. Mix. Pour onto greaseproof paper inside a shallow tray (so it's no more then 1inch thick). When cool, chop garlic butter into small cubes. Freeze. Then add chunks of frozen garlic butter to various dishes throughout the year. You can cook it from frozen on top of a fillet of fish... As the fish cooks the butter melts and releases its garlic yumminess. Or melt a cube in the microwave to pour over vegetables. Or add a cube to a sauce/soup at the end of cooking. Or use in garlic bread. So easy!
I really want to find some wild garlic now... The place I usually go to pick it is a drive away and thus forbidden. I have been searching for a local patch on my daily walk, but alas in vain!
