Chicken but not potatoes so what can I do with it?

I have a whole chicken which I'll roast but can't have a roast without potatoes IMO so what can I do with it?

I have white rice,bit boring so what can I do to make it interesting?

Bit worried about lack of sauce too?!

Have you got carrots? I'd roast them instead to have with it anc season the skin with lemon juice, salt and pepper- I did this at weekend and nobody missed the potatoes

Fry onions peppers and interestingly preferably Mediterranean veg in oil, throw in the rice dry and coat with the oil/vegflavours

Add stock,all in one go, leave to boil and cook for the 20 mins that rice needs
Voila savoury rice

Try Moroccan style. I use this recipe realfood.tesco.com/recipes/moroccan-spiced-roast-chicken.html#method but Jamie Oliver has a simpler one and I’ve also found this one www.foodandwine.com/recipes/moroccan-roasted-chicken I normally serve with couscous


Alternatively, try Tandoori style www.bbcgoodfood.com/recipes/tandoori-roast-chicken and serve with rice

Any Chinese spices / soy sauce etc you could use as a rub, serve it with fried rice.

Or curry paste - rub all over and roast and serve with the rice.

Chicken fried rice?
