Calling all frugal vegetarians (and frugal people cutting down on meat)

Today I am making beetroot burgers. I make a big batch so I can freeze some as well. I am also going to make a batch of lentil soup for lunch over the next few days.

Would anyone like to share some lovely frugal recipes?

Lentil dhal -
Mine is -
fry onion, garlic, chilli
add mustard seeds, cumin seeds, ginger, turmeric, dried cumin
add red lentils - about 250g
tin of coconut milk
water
cook until the lentils are soft
Make a tadka with onion slices, garlic slices, more mustard and cumin seeds and oil
It freezes well too, so easily doubled to freeze half.

Had this last night with easy flatbreads made from natural yoghurt and SR flour.

Vege sausages.

The basic recipe is;

Can of Cannellini beans (have also used butter beans)
Leek or onion. (and garlic if wanted)
100g cheese,
A herb of sorts
Fresh breadcrumbs to bind and coat.

Basically, blend beans, grate cheese and mix together.

Recipe can be varied - i.e. smoky with a smoked cheese and paprika or 'Irish' with Irish cheddar, caramelised onion and chives.

Thanks for the replies everyone, I've been at work this week so just catching up.

I like the idea of spinach and ricotta balls.

I made katsu tofu last week and it was amazing.

I'm vegan. I make lots of cheap vegan food. My favourites this week are:

Red peppers, red onions chopped and fried. Add one packet of Aldi sweet chilli sauce and caramelise. Then add cold, cooked rice and stir for 5 minutes. Delicious.

Stir fry broccoli and mushrooms in oil (you can finely chop the stalk of the broccoli, so no waste) add lots of chopped garlic (at least 3 cloves), cup of vegan stock, herbs and spices and a teaspoon of sugar. Add some vegan cream or milk and then cooked spaghetti. Cook for 3 minutes. Scatter with herbs or vegan cheese to serve.

Peanut butter cookies. Cream 2 big spoons of peanut butter with one big spoon of apple sauce. Add 1 tsp vanilla extract, 1 tsp baking powder and 1 cup of flour and mix. Make balls of the mixture and flatten on a baking tray with a fork so they are crinkly. Bake in the oven on medium heat for 15 - 20 minutes. Half dip them in melted dark chocolate if you like.

I'm always finding/inventing new, easy and cheap recipes.

Made a big batch of delicious pasta that the one year old demolished for lunch today.

Super easy - boil pasta until almost cooked, drain and put back into pan

Add one tin mixed beans in tomato sauce, 1 tin chopped tomatoes, spring onions, big handful of peas, whatever veg you have available

Add fresh or dried herbs and garlic to taste

Back on the heat for 10 minutes to cook through

Done
