I have plain white and wholemeal flour - can I make anything dense/savoury/bread-like?

I don't have any strong flour but want to make some bread-type things as I couldn't get any allergy-friendly bread.

Does anyone know of nice recipes for dairy, egg and soya free bready kind of things?! I do have some of the quick dried yeast that you use in a breadmaker too. Smile

Soda bread. You can use milk curdled with a squeeze of lemon/yogurt in place of buttermilk.

Sorry, that's not dairy free! Don't know if you could use plant milk? There is a recipe for porridge bread where you could make porridge with plant milk, and then that would be dairy free.

I was going to say scones.

I haven't been able to get bread flour which makes me sad after years of baking bread we have had to buy pre made bread and it's so thin and flimsy and disappointing to eat. I will be thankful and appreciate my normal bread so much more once the panic buying ends 😃

Jack Monroe reckons you can use plain flour for bread making with no noticeable difference, now is the time to test her theory!

Chapatis and other flat breads just need water, salt to taste and sometimes a bit of oil.

What about chapatis/ flat bread type things?

We have used plain flour when making bread if we didn't quite have enough bread flour and it didn't turn out very good.

Ooh porridge bread sounds nice! I hadn't thought of scones, I haven't made them without dairy so I could try those too.

I often use oat milk with cider vinegar to curdle it in baking, so I could give that a go for the soda bread. I'll see if I can find a vegan recipe for that.

Do you think a normal bread recipe with plain flour would be disastrous?

@ChikiTIKI we used to buy our bread flour online ( but no longer as our son is now a baker!) from flour.co.uk/buy-our-flourhere? They are obviously very busy at the moment but worth a try?

You can make scones with dairy free spreads. Ring the changes by adding chopped black olives, nuts, crispy fried onions or snipped up sundried tomatoes.

And you can make one big one instead of several smaller ones, just adjust the baking time.

I like that idea too, putting different foods into the scones to add savoury flavours.

@ChikiTIKI it was very very painful while he was learning. He practiced at home all bloody night long. He's a traditional sourdough baker and also French bread. He's good! And I think he will always have a job ( in normal circumstances) as a few bakeries have tried to poach him! He is ultra critical of bread now.....

you can puree and water down any cooked veg and substitute it for the water part (i've done potato and almost always squash but tomato would be nice)

bread will work, might take a bit longer to knead as plain flour has less gluten, but it will work.

the long version:
mix 1 cup of flour with 1 cup of water and a sprinkle (half a teaspoon) or so of yeast)
leave for a few hours, until you have a bubbly mass.

then add another cup of water, 500g flour, pinch of salt, glugg of oil and knead.
knock back once doubled and put in loaf tins.
let rise and bake at 200 conventional (fan is too drying I find) for about 45 min.

Flour tortillas - can make using any kind of fat, lots of recipes online. I made some last week.
